There was a reason we showed off that potato peeler last week! It was in preparation for making veggie ribbons this week. You can even use the pesto we made with this!

I like to make ribbons from zucchini and carrots and toss it in some pasta. Just an extra way to add some extra veggies to your meal. Here we go.

First thing, every one washes their hands! Whenever we are preparing and touching our food, we should start with clean hands. Next, things you’ll need are your potato peeler, a zucchini, a carrot, some pasta, and your favorite sauce. You know your family best so modify accordingly. I cooked some nice, wide egg noodles. While those were cooking, I made my zucchini and carrot ribbons. Remember it is ok to take their time and to slide the peeler away from their hand. Make sure they have a good grip on the vegetable. And if they need help, ask what you can do, and do it together!

Once you think you have a good amount of ribbons, steam or cook them a little so they soften. I mimicked what I did with my pasta. While your veggie ribbons are cooking, toss the pasta noodles with sauce. Guess who can mix this great with their hands. The kids! It might be messy so give them a bit of a bigger bowl to mix in. It’s ok to have fun while making our food! Ask them questions about it, the feeling in their hands, the smell of the sauce, maybe even ask for them to taste test! If they don’t want to get messy there are plenty of things they can use like tongs, two spoons, or two forks. They are the helper. Ask what their idea might be on how to mix it. They usually have a lot of ideas!

Strain the veggie noodles and toss them on top of your sauced pasta. You can leave it that way or ask your mixer to help you out!

You might hear, “I don’t like carrots". “I don’t like zucchini.” Sometimes I like to refer to new things as experiments. A scientist tries new experiments to find things out. So we are trying something new. Maybe making the ribbons is the experiment. Maybe eating the ribbon in our pasta is the experiment. Will we like it? Maybe, maybe not. We won’t know what we think until we try!
