#makeitmonday : watermelon popsicles

It is the hot part of summer and one of the greatest things about summer is WATERMELON! So we are making  a simple refreshing snack. Watermelon popsicles!

Things you will need:

-small cups (the smallest you have to shape popsicles, OR if you have popsicle molds use them!)

-a stick of sorts ( popsicle stick, straws, stirrers, etc.)

-watermelon!

-forks

-plates

Let’s get started! We cut up the watermelon first for the kids. I’m sure they can hack away at it to get inside, but we’ll leave that experiment for another day!

They liked using their forks to smash the cubed watermelon. The slices, they enjoyed trying to cut chunks off and smashing them. The slice took longer to smash which may be good for some families! Some kids like to be engaged and working to figure out the extra steps, some kids need it, and some kids are good with the easiest way. Challenge is different for everyone, but let’s keep this fun! I like giving options and talking about the differences. Is it easier to smash this one? Why do you think? Why is it more fun cutting that one? Which piece do you like to use more?

Put the smashed watermelon into the cup of choice. The plate will probably hold some watermelon juice and that is perfect to add once the watermelon chunks are in.

Stick in a stick! The chunks are usually good at holding the stick up right. Some of our friends got a little fancy, and made watermelon skewers. We froze those too for fun, but they can be a good quick snack! And of course we munched on a lot of watermelon in this process!

Place in the freezer and wait! They will probably ask at least once an hour if they can eat their popsicles. And there’s another conversation or reminder to talk about how things freeze! In the end, these sure were winners! You can add some sugar to your smash process, but not necessary! We like to keep things really simple and appreciate fruits and veggies natural flavors and sweetness. Share pictures of your popsicles! Maybe even try a different fruit!

Happy Monday!
